Kan (also known as Kan-no-shiro) by Ippodo Tea is a medium-bodied, well-balanced ceremonial matcha that delivers plentiful umami and sweetness balanced by refreshing astringency—a versatile everyday blend that shines across all preparations. This "Goldilocks" matcha sits perfectly in the middle of Ippodo's lineup, offering enough richness to satisfy matcha enthusiasts while remaining approachable and smooth enough for daily enjoyment without overwhelming the palate.

Founded in 1717 in the heart of Kyoto, Ippodo Tea has built an unparalleled reputation for aromatic, complex, and consistent teas through their meticulous blending process. Each matcha is a carefully crafted composition from rare harvests across different farms and batches—blended in precise proportions to create depth, nuance, and year-round consistency. Kan exemplifies this philosophy with its round, full-bodied character that balances sweet umami richness with pleasant astringency, creating a satisfying cup with subtle caramel-like notes and a lingering finish.

About this matcha:

  • Perfectly Balanced: Medium-bodied with harmonious sweetness, robust umami, and refreshing astringency—the ideal middle ground for all matcha lovers.
  • Versatile Excellence: Shines brilliantly as usucha (thin tea), koicha (thick tea), or matcha lattes—strong enough for flavor to come through in milk, yet smooth without bitterness.
  • Everyday Luxury: Smooth, round aftertaste makes it perfect for daily drinking—enjoy multiple times throughout the day without feeling overwhelmed.
  • Latte-Friendly: Mild astringency pairs beautifully with milk, producing a softer drink with more umami than Ippodo's lighter blends—highly recommended for latte enthusiasts.
  • Caramel Notes: Subtle caramel-like sweetness with clean umami depth—a soft, approachable flavor profile that never turns harsh or bitter.
  • Vibrant Color: Bright jade-green hue reflects its freshness and quality, with a pleasantly sweet aroma reminiscent of fresh greenery.
  • 300-Year Heritage: From a family-run tea company founded in 1717, renowned for carefully selected, high-quality teas from Kyoto's mountain regions.
  • 100% Uji Origin: Shade-grown, stone-ground, and blended in Uji, Kyoto—the birthplace of Japan's finest matcha.

How to Prepare

Matcha Latte

Combine matcha's natural sweetness and crisp green bite with the creamy texture of milk.

Step 1: Sift 3g (0.11 oz) of matcha (2 heaping tea ladles or 1.5 level teaspoons.)

Step 2: Pour boiling water into a teacup to cool it to 80°C (176°F), then pour 100 ml (2 oz) into tea bowl.

Step 3: Whisk vigorously 15 seconds, making an "M" shape.

Step 4: Add 100 ml (3.4 oz) of warmed or foamed milk into mug.

Usucha (thin tea)

The standard matcha whisking method, made to be a normal, liquid consistency.

Step 1: Sift 2g (0.07 oz) of matcha (1.5 heaped tea ladles or 1 level teaspoon.)

Step 2: Pour boiling water into a teacup to cool it to 80°C (176°F), then pour 60 ml (2 oz) into tea bowl.

Step 3: Whisk vigorously 15 seconds, making an "M" shape.

Koicha (thick tea)

Matcha made into a rich, thick paste by using less water and more matcha powder per serving.

Step 1: Sift 4 g (0.14 oz) of matcha (3 heaping tea ladles or 2 level teaspoons.)

Step 2: Cool boiling water to 80°C (176°F) in teacup, then pour 30 ml (1 oz) into bowl, just covering matcha powder.

Step 3: Whisk slowly for 15 seconds moving back and forth.
