Suisen (すいせん) – Bulk Edition is a bold, cost-effective culinary-grade matcha from Marukyu Koyamaen, engineered specifically for large-scale commercial processing where matcha flavor must cut through overpowering ingredients. With strong astringency that shines through heavy doughs, rich chocolates, and high-fat applications, this workhorse matcha maintains its distinct flavor profile and consistent bright green color even during high-temperature baking and industrial-scale production—making it the economical choice for commercial bakeries, chocolate manufacturers, and food processing operations requiring reliable matcha performance at volume.

Why Suisen for Your Business:

  • Strong Astringency That Cuts Through: Bold, grassy matcha character with pronounced astringency that maintains distinct flavor identity through heavy butter, chocolate, sugar, and dairy—perfect for recipes where delicate matchas would disappear entirely.
  • Ideal for: Commercial bakeries processing heavy doughs (brioche, croissants, pound cakes), chocolate manufacturers, confectionery operations, large-scale food processing facilities requiring cost-effective matcha with persistent flavor.
  • Consistent Color Stability: Bright green color verified by Marukyu Koyamaen's colorimeter quality control—maintains vibrant hue through high-temperature baking, chocolate tempering, and large-batch processing.
  • Budget-Friendly Volume Pricing: Maximum value for commercial operations—delivers distinct matcha flavor and color at entry-level culinary pricing, perfect for high-volume production where cost efficiency is critical.
  • Overpowering Ingredient Specialist: Engineered to perform in challenging applications—works beautifully in chocolate ganache, dark cocoa batters, heavily spiced doughs, and rich buttercream where matcha must assert itself against competing flavors.
  • Grassy, Bright Character: Pleasant astringency with bright vegetal notes and distinctive matcha aroma—creates authentic matcha flavor that enhances other ingredients rather than overpowering while remaining recognizable in finished products.
  • Large-Scale Processing Ready: Proven performance in commercial bread production, industrial ice cream manufacturing, bulk confectionery operations, and large-batch baking facilities—stable, reliable, and cost-effective.
  • Heritage Quality Control: From Marukyu Koyamaen, established 1704—strict quality control using infrared moisture meters and colorimeters ensures every batch meets professional standards for color, particle size, and flavor consistency.
Shipping Notice: Variants designated as pre-order will ship within 2–4 weeks from the order date. In-stock variants ship normally.

Step 2: Pour boiling water into a teacup to cool it to 80°C (176°F), then pour 100 ml (2 oz) into tea bowl.

Step 3: Whisk vigorously 15 seconds, making an "M" shape.

Step 4: Add 100 ml (3.4 oz) of warmed or foamed milk into mug.

Usucha (thin tea)

The standard matcha whisking method, made to be a normal, liquid consistency.

Step 1: Sift 2g (0.07 oz) of matcha (1.5 heaped tea ladles or 1 level teaspoon.)

Step 2: Pour boiling water into a teacup to cool it to 80°C (176°F), then pour 60 ml (2 oz) into tea bowl.

Koicha (thick tea)

Matcha made into a rich, thick paste by using less water and more matcha powder per serving.

Step 1: Sift 4 g (0.14 oz) of matcha (3 heaping tea ladles or 2 level teaspoons.)

Step 2: Cool boiling water to 80°C (176°F) in teacup, then pour 30 ml (1 oz) into bowl, just covering matcha powder.

Step 3: Whisk slowly for 15 seconds moving back and forth.
