Kuchikiri Matcha Set by Gion Tsujiri

$120.00

The Kuchikiri Matcha Set by Gion Tsujiri honors the ancient Kuchikiri (口切り) ceremony—the "New Year of Tea"—celebrating the sacred moment when aged tea jars are opened each autumn. This exclusive set features two 30 g tins of Kuchikiri no Shiro and Kuchikiri no Mukashi, special autumn-blend matcha made from tea leaves harvested in early summer and aged for six months to develop a mellow, enriched umami and natural sweetness.

Rooted in a tradition spanning over 160 years, Gion Tsujiri meticulously stone-grinds premium Uji tencha leaves to preserve their vibrant color and aromatic depth. The Kuchikiri ceremony, held in November, marks the opening of sealed tea jars (chatsubo) stored since the spring harvest—a moment tea masters consider the most formal and reverent of all tea celebrations. This set brings that timeless ritual into your home.

About this set:

  • Dual Autumn Blends: Experience two distinct matcha profiles—Kuchikiri no Shiro for a smooth, balanced character and Kuchikiri no Mukashi for deeper umami complexity.
  • Aged for Depth: Six months of careful aging transforms fresh tea into a mellow, sweet, and richly aromatic matcha—the hallmark of Kuchikiri tradition.
  • Heritage Craftsmanship: Stone-ground by hand at just 40 grams per hour, ensuring ultra-fine texture and vibrant jade-green color.
  • Ceremonial Excellence: Perfect for koicha (thick tea), usucha (thin tea), or elevated matcha lattes—versatile enough for tradition or modern enjoyment.
  • Gift-Worthy Presentation: Two beautifully designed 30 g tins celebrate the autumn season, making this set ideal for tea enthusiasts or special occasions.

How to Prepare

Matcha Latte

Combine matcha's natural sweetness and crisp green bite with the creamy texture of milk.

Step 1: Sift 3g (0.11 oz) of matcha (2 heaping tea ladles or 1.5 level teaspoons.)

Step 2: Pour boiling water into a teacup to cool it to 80°C (176°F), then pour 100 ml (2 oz) into tea bowl.

Step 3: Whisk vigorously 15 seconds, making an "M" shape.

Step 4: Add 100 ml (3.4 oz) of warmed or foamed milk into mug.

Usucha (thin tea)

The standard matcha whisking method, made to be a normal, liquid consistency.

Step 1: Sift 2g (0.07 oz) of matcha (1.5 heaped tea ladles or 1 level teaspoon.)

Step 2: Pour boiling water into a teacup to cool it to 80°C (176°F), then pour 60 ml (2 oz) into tea bowl.

Step 3: Whisk vigorously 15 seconds, making an "M" shape.

Koicha (thick tea)

Matcha made into a rich, thick paste by using less water and more matcha powder per serving.

Step 1: Sift 4 g (0.14 oz) of matcha (3 heaping tea ladles or 2 level teaspoons.)

Step 2: Cool boiling water to 80°C (176°F) in teacup, then pour 30 ml (1 oz) into bowl, just covering matcha powder.

Step 3: Whisk slowly for 15 seconds moving back and forth.
