Byakuren (白蓮 - "White Lotus") by Marukyu Koyamaen is a premium culinary-grade matcha that delivers vibrant green color, balanced bitterness, and distinctive matcha aroma—expertly crafted for commercial use and culinary creations. This well-balanced, food-processing matcha has become a hidden gem in Japan's café scene, favored for rich, smooth matcha lattes with its pleasantly smooth, creamy texture and robust flavor profile that holds up beautifully when whisked with milk.

Founded over 300 years ago during the Genroku era, Marukyu Koyamaen is recognized as one of Japan's top three matcha brands, maintaining strict standards for flavor and safety while overseeing the entire process from cultivation to production in-house. With 30 Minister of Agriculture awards and widespread recognition in professional kitchens worldwide, Marukyu Koyamaen's name is synonymous with unparalleled quality—even in their culinary-grade offerings.

Byakuren is characterized by bold, dominantly grassy flavor with mild bitterness and slight astringency—a flavor profile that reviewers describe as "assertive enough for lattes but smooth enough to drink on its own." What makes this matcha exceptional is that despite being culinary-grade, it outshines most "ceremonial" options from other brands, offering affordable quality perfect for daily lattes without compromising on taste or color. Its soft, smooth texture with deep grassy and vegetal notes makes it especially well-suited for strong-tasting lattes, matcha ice cream, baking, whipping cream making, and any matcha-based recipe where you want the flavor to truly shine through.
